Simple & Delicious RV Recipes for Campfire Chefs

When you’re on the road in your RV, you need recipes that are easy to cook in your galley and at the campfire. The best way to keep your belly full without overloading your RV kitchen is sticking to recipes that are simple. But that doesn’t mean you can’t enjoy a good meal on the road! Thomas’s Quick & Easy Breakfast Burritos

When it comes to breakfast, you need something that’s hearty and nutritional. After all, if you’ll be hitting the trails or checking out America’s best national parks, you don’t want to head out on an empty stomach! Thomas’s breakfast burritos are the perfect combination: filling, easy to make, and delicious!

Here’s what you’ll need:

  • 4 Eggs
  • 1 Tablespoon of Milk
  • 1 Tablespoon of Chopped Chilies
  • 4 Sausage Links
  • 4 Flour Tortillas (8” diameter)
  • 5 Cups Shredded Mexican Cheese

Optional:

  • 1lb Bag of Hash Browns/Shredded Potatoes

Cooking Your Breakfast Burritos

#1. If you’re adding potatoes to your breakfast burritos, cook the hash browns or shredded potatoes of your choice as directed on their bag, and setting them aside when ready.

#2. Cook your sausage links until complete and slice into smaller pieces.

#3.  In one bowl, beat the four eggs while mixing in the chopped chilies and milk until blended.

#4. Pour the blended eggs onto a skillet over medium-heat, stirring occasionally until fully scrambled.

#5. Add in the sliced sausage links and hash browns, if you’re using them, as the eggs near completion.

#6. Pour equal portions into the center of each tortilla, adding the cheese to finish.

That’s all there is to it! These are a favorite for campers not only because of how easy they are to make, but also because of how easy they are to keep! Depending on how many campers you have, you can increase or decrease the recipe as needed. We also recommend making more than you might need – as these burritos can easily be wrapped in foil and saved for tomorrow’s breakfast too!

Tony’s Campfire Chicken Pot Pie

Chicken pot pie is a family favorite comfort food, and you don’t have to leave it behind when you hit the road in your RV. Thomas’s chicken pot pie recipe is designed to be made with just a Dutch oven, easily over a campfire. This one-pot meal will help you keep your galley down to just the essentials and still look like a master chef on the road.

Here’s what you’ll need:

  • 1 Can Cream of Mushroom Soup
  • 1 Can Cream of Chicken Soup
  • 2 Large Cooked Chicken Breasts
  • 2 Cans of Mixed Vegetables
  • 1 Can Refrigerated Biscuit Dough

Cooking Your Campfire Chicken Pot Pie

#1. Start by cutting your chicken breasts into cubes.

#2. Stir the chicken breast cubes, vegetables, chicken soup and mushroom soup in the Dutch oven

#3. Cook until warmed through – usually about 14-16 minutes over hot coals.

#4. After the chicken mix is warmed, place the biscuit dough neatly over the mixture to cover it end to end. Place the lid back on the Dutch oven and cover in coals.

#5. Biscuits should cook to completion between 15 and 30 minutes. Keep an eye on them until they’re done and then serve!

This simple recipe can make a filling dinner that feels like home without needing all the extra pots and pans. Re-heating the leftovers is simple, just a short time in the microwave is all it takes depending on how much you have left.

Josh’s RV Stir Fry

When it comes to making delicious meals without much prep work, it’s hard to beat a stir fry. With just one skillet or wok and a pot, you can get a good assortment of protein and vegetables to feed your family a healthy meal. Josh’s stir fry RV recipe should be a cinch for anyone that’s cooked meat over an open fire.

Here’s what you’ll need:

  • ½ Pound of Beef/Steak
  • 1 Red or Green Pepper
  • 1 Cup White or Brown Rice
  • 1 Onion
  • 2 Tablespoons Soy Sauce
  • 1 Clove of Garlic
  • 1-3 Cups Vegetables (Your Choice)
  • ¼ Cup Oil

Cooking your RV Stir Fry

#1. Pour the oil in your skillet or wok. Heat until sizzling.

#2. Add garlic and onion.

#3. Pour 1 cup of rice into boiling water and cook for 8 minutes.

#4. While cooking rice, add meat to your skillet or wok and cook thoroughly.

#5. After meat is cooked, added vegetables to skillet or wok. Cook for 3 to 5 minutes or to desired texture.

#6. When the vegetables are cooked, add rice to the skillet or wok and continuously stir.

#7. Add soy sauce to taste to the skillet or wok.

#8. Cook until rice obtains a tacky texture and serve immediately.

The combination of meat, vegetables and rice gives you a great mix full of the protein and energy you’ll need to make the most of your trip. If beef isn’t your favorite, feel free to mix it up with chicken or a vegetarian option too! Soy sauce and garlic can also be swapped out for other flavors of choice, which is great if your kids are picky eaters.

Ruth’s Pot o’ S’mores Cake

If you’re looking for ways to make the kids love RV trips, nothing beats a classic: s’mores! Ruth’s favorite RV dessert recipe is a small twist on this campfire favorite. Using just a Dutch oven, this recipe can serve a whole family twice over with gooey deliciousness. Just don’t count calories on this one.

Here’s what you’ll need:

  • 1 Grocery Store Angel Food Cake
  • 1 Package of Graham Crackers
  • 2 Cups of Semi-Sweet Chocolate Chips
  • 2 Cups Miniature Marshmallows

Cooking your Pot o’ S’mores Cake

#1. Start by shredding the Angel Food cake and placing the pieces in a Dutch oven

#2. Break up your graham crackers and cover the cake, mixing the bowl just enough to get some of the graham crackers in the cake pieces

#3. Pour the chocolate chips over the top of the cake and crackers

#4. Evenly spread marshmallows across the top of the chocolate chips

#5. Cover the Dutch oven and place over a grill. Cook until the marshmallows are toasted to a golden-brown color. Serve immediately.

It will be messy. It will be sticky. But it will be delicious. If you’re looking to end a camping trip for the kids (or just adults with a sweet tooth) then you can’t go wrong with this incredible treat. As far as RV recipes go, it’s sure to be a hit.
